Cod with Pesto Crumble

INGREDIENTS
• 20 g flakedalmonds
• 60 g breadcrumbs
• 3 garliccloves
• 1 smallonion
• Olive oil
• Salt and pepper
• 30 g freshbasil
• 15 g pine nuts
• 25 g grated Parmesan
• 2 codfillets
Instructions
1. Place the flaked almonds, breadcrumbs, 1 garlic clove, onion, 1 tbsp olive oil, salt and pepper in a food processor. Blend untilcombined and refrigerate.
2. In the meantime, blend the washed basil leaves, pine nuts, the 2 remaining garlic cloves, 5 cl olive oil, Parmesan, salt, and pepper in a food processor until smooth.
3. Place the cod fillets in a baking dish. Cover with the pesto, then top with the almond crumble mixture.
4. Bake at 180°C (350°F) for 20–25 minutes until the topping is golden.
